SCOTTISH ADVENTURE WITH MR LYAN & DANIEL GRAJEWSKI

It was a shared obsession with taste and quality ingredients that found us embarking on a memorable trip to the Scottish West Coast with Ryan Chetiyawardana, aka Mr Lyan and Daniel Grajewski (Senior Director of F&B at Jose Andres Group).

Eager to learn more about the sea salt used in our new soda water, we found ourselves at the fascinating Blackthorn Salt Tower. Here, we met the passionate experts growing some of the best salt in the world and learnt about the power of salt as a flavour enhancer.

Their unique process passes sea water through a tower of blackthorn bushes. As the sea water slowly trickles down the blackthorn tower, other mineral flavours from the sea are collected and captured in the salt. Blackthorn is the only tower in the world that produces salt like this and the only one ever to do so using sea water!

The result? A distinctively umami salt with a sweet completeness.

This trip was an incredible source of inspiration for both Mr Lyan and Daniel, who used our new soda water to create cocktails with their own twist. Both exploring how salt can transform something simple into something quite magnificent.

Blackthorn x Mr Lyan Peach Whisky Soda

Ingredients: 

  • UK Premium Soda Water
  • 40ml Johnnie Walker Black Label Whisky
  • Lucky Liqueurs, Peach Liqueur
  • Handpicked sea herbs for garnish (can use mint as alternative)

Method: 

  1. To your favourite highball glass, add ice.
  2. Add the whisky and the peach liqueur to the glass
  3. Add the Soda Water till the glass is full.
  4. Garnish with flowers & enjoy!

Blackthorn x Daniel's Whisky Coconut Highball

Ingredients: 

  • US Club Soda
  • 1.5 oz Johnnie Walker Black Label Whisky
  • 2.5 oz Coconut Water 
  • Drop of Angostura Bitters
  • Lime for garnish

Method: 

  1. To your favourite highball glass, add a drop of angostura bitters and ice.
  2. Add the coconut water and the whisky to the glass.
  3. Add the Club Soda until the glass is full.
  4. Garnish with lime peel & enjoy!

On the hunt to create the perfect soda water for mixing, we reformulated our recipe to create the perfect balance of salinity and carbonation, with the addition of a hint of Blackthorn sea salt. We are thrilled that this will be available in the UK from January 2025.
